It is yellow to amber coloured oily liquid with warm bitter taste, iodine value 18 to 24, moisture not more than 3%, saponification value 45 to 55, hydroxyl value 65 to 80 polysorbate 80 is a nonionic surfactant and emulsifier derived from polyethoxylated sorbitan & oleic acid and is often used in foods.
In the nomenclature of polysorbates, the numeric designation following polysorbate refers to the lipophilic group.
Polysorbate 80 is used as an emulsifier in foods, particularly in ice cream. Polysorbate 80 is an excipient that is used to stabilize aqueous formulations of medications for parenteral administration, and used as an emulsifier in the manufacture of the popular anti-arrhythmic amiodarone . It is also used as an excipient in some european and canadian influenza vaccines . It is also used in the culture of mycobacterium tuberculosis in middlebrook 7h9 broth.
Polysorbate 20 is a nonionic surfactant and emulsifier derived from sorbitol which comes from fruit and berries. polysorbate 20 is a water-soluble yellowish liquid used as a dispersing agent -mixes oil and water, fragrance solubilizer and stabilizer, lubricates and has a soothing effect on the skin. polysorbate 20 does not disrupt the properties of the essential oils by creating ionic bonds which are formed when two or more atoms give up electrons. ionic bonds are stronger and do not separate in solution, but they do disrupt the properties of the essential oils. hence polysorbate 20 preffered over any other emusifier. it is used in cosmetics, sprays, lotions, pharmaceutical & food industry etC.
